Description

Edge Pro Diamond Matrix Stones are used for sharpening knives on Edge Pro and Hapstone knife sharpeners. Diamond sharpening stones offer excellent performance in sharpening knives of any steel.

The full set includes all 6 grits from 80 to 4000.

Matrix Diamonds consist of a 1.6mm-thick diamond-bearing plate on an Edge Pro aluminum base. The diamond-bearing plate contains evenly distributed diamond grains with resin bonding. The manufacture of bonded diamonds is more complex than for coated diamonds. Bonded diamonds provide better feedback and give the sharpening stone a much longer lifespan.

Matrix Diamonds are recommended to be used with water as a lubricant for the best feedback. The diamond does not absorb water. Splash water on the stone's surface.

Just the solution I was looking for. I've been using 2 sided Venev stones and they work great but they're a terrible fit on my TSPROF. These Edgepro matrix stone are much easier you place in the holders and I feel I have more control. I still need practice but these stone so far have been GREAT!!

I fell further down the rabbit hole. I'm an old free hand sharpener using Dan's Whetstones for years. I absolutely love Dan's but recently got a cheap Xarilk 3rd gen for Christmas and was blown away by the results on those crummy little diamond plates that came with it. I did a lot of research and I opted for investing in the Edge Pro plates. They really lay down soft beautiful scratch patterns and a hell of a mirror with the 1700 and 4000 plates. Stroping makes for a jewelry-esque mirror finish, almost too blingy and sparkly. I would like more aggression on the 80 when doing re-profiling, but I have just bought a KME 50 grit beast for that. My brother gave me his kitchen knives for my practice and break-in of the stones. His old Zwilling Henckels had abused edges that look like they were sharpened on golf clubs. After re-profiling them they sparkle. His paring knives are like scalpels. I don't know how the load-up on other comparative stones is, but these

These stones are high maintenance, they need to be kept wet (not damp) or they load up in just a few passes. Even when they are kept wet they can only sharpen a couple of knives before needing to be scrubbed with barkeepers friend. If they are not kept clean ( vey clean ) they are basically worthless.

Used the Edge Pro Diamond Matrix 650 and 1100 grit to refine the edge of the Epicure at 14 deg. Sliced butter smooth chicken fillets! Gotta throw in the TSPROF Pro Hunter is amazing!

expensive but fantastic. I originally grabbed a set of double-sided Venev Centaur stones with my Hapstone kit a couple of years ago and they were OK, but I didn't like the relative lack of retention without the "ears" on the ends of the stones, and my edge pro blanks I used for stropping were so much slimmer I had to actually move my fine-tuning stop to swap between the angles, which was annoying. so after getting a couple years of solid use out of them I decided to upgrade to these and I'm very happy I did. they seem to cut even better, speeding up my overall sharpening process, and the results are incredible. I get a better edge after running through these stones then I was with the Venevs *and* subsequently stropping with edge pro tapes. unless I run into some unexpected durability issues I expect to be using these for years, if not decades.

It is perfect stone. Edge Pro's diamond matrix stone has excellent removal power at low particle size, and all stones play their respective roles. Excellent. However, dressing is necessary and it took a lot of time.

Upgrade for worksharp I purchased the upgrade kit for my worksharp and now I only have the use of 1.5 inches of the edgepro diamond stones and the worksharp at full adjustment (30) gets me 19 degrees!!

Mirror Image Edge even before stropping I just received these stone and have only sharpened one Henckle Chef's Knife with them. The coarse stone will load-up if you don't keep the swarf wiped away, I'm used to open diamond structures vs. Matrix structures and I believe it's parr for the course. The progression is just right. The 2,300 and 4,000 grit stones produced a brilliant mirror finish on the sharpened edge. Based on my short experience I feel these "Made in USA" stones may be THE best matrix diamond sharpening stones available from Gritomatic at this time. I'll redo the review in a couple of months since "one sharpening does not a trend make". In the mean time, I'm pleased as punch.
