They work well with any hardness of steel, and any volume or type of carbides in the steel matrix. Their comparison to Venev Centaur stones would be mostly personal preference. Both types do an equally good job.

Most of the Columbia Gorge stoneworks stones (Edge Pro matrix are also made by CGSW) have a layer of resin on the top surface that makes them near unusable until this layer is removed.

The Matrix stones is the only CGSW stones that are dressed when new. (As far as I'm aware this is still the case).

A high grit diamond compound on a strop will be much better for mirror polishing. If you're not after a complete mirror finish, then these stones are great and will leave an incredible final edge.
